1. Preheat your oven 190°C/170°C Fan/Gas Mark 5.
2. Put the kettle on to boil.
3. Slice the top off the pepper and scoop out the seeds and pale pithy flesh. Save the lid for later.
4. In a heatproof bowl, crumble the quarter of a stock cube into the dry couscous then pour over boiling water until the surface of the couscous is just covered. Leave until all the water has been absorbed.
5. Once done, fluff up the couscous with a fork and then spoon it into the hollow pepper. Once full place the sliced lid back on.
6. Place on a baking tray and pop into the hot oven for 10 minutes.
7. Enjoy immediately with a crispy green salad.
